Standing in the kitchen one of these recent rainy afternoons, I was searching for a recipe that would use up the old bananas browning in the fruit bowl, that wasn’t Banana Bread. Finding a few banana recipes, I settled on this Banana and Berry Tray Bake.
The recipe is a simple one, easy to throw together and bake. I found it took longer to cook than the recipe says, baking for another 20 minutes till cooked through. The use of buckwheat flour made the end result to be a very dense cake.

While sourcing buckwheat itself is easy, buckwheat flour tends to be more of a challenge, so I just make it myself.

Buckwheat kernels into the Thermomix and mill for 1 Min/Speed 9.

I like that it wasn’t overly sweet and the kids enjoyed it in their lunchboxes for a week (always a win!). You could even swap the fresh blueberries for strawberries or most other seasonal fruit. Maybe not more bananas though.
