Not enough balls!

It’s always guaranteed that while reading every single recipe in a cookbook, there’ll be some typo’s. Sometimes it an ingredient spelt wrong (which I don’t figure out till after I’ve spent a good half an hour googling….), sometimes its the wrong quantity of an ingredient.

Found my first…

Makes 50

Does not make 50. Not even if I doubled the ingredients. More like 15. So is the typo with the overall serving or all of the ingredient quantities??

Also, hot tip I’ve recently learned from my friend Karen: using an ice-cream scoop will give you the perfect sized balls, every time!

I love these kind of throw-all-the-ingredients-in-and-blend types of recipes. There are so many flavour combinations you can create! You can add carrots or beetroot to give it colour (and hide extra veggies into your kids meals). Different dried fruits will add different flavour. Dried apricots vs dates. Nut free ones can be made with sunflower seeds or pepitas for school friendly snacks.

And you can roll them in coconut or cacao or ginger sugar or chia seeds or almond meal or crushed pistachios or anything you can find in your cupboard really.

Also, instead of rolling them into balls individually; if you’re stuck for time you can just press the mixture into a tin then set it in the fridge before cutting it into squares! Such a great cheat if you’re short on time or volunteer rollers!
