Nanny’s Lemonade Scones

Growing up my sisters and I would head off for the school holidays and spend time at my Aunt Hilarys or Nanny’s place. I always thought it was the funnest thing to do, now I can see that my parents probably just wanted the house to themselves. Full-time working parents didn’t lead to a lot of school holiday free time so hanging out with Nanny was always better than spending days on end bored at home.

Nanny and I once painted her garage wall, just for fun. We drew a bright and sunny rainbow with flowers and butterflies then painted it in. I’m not too sure her husband was all that happy with us, but it was fun at the time. I’m never sure who enjoyed it most, me or Nanny.

I used to spend hours watching her potter around her little kitchen. She’d always have something on the go, with her pressure cooker steaming away until dinner time. Pizza with all the leftovers on top (mashed potato on pizza is amazing BTW….). And a slice of something sweet.

As I grew up I’d go and spend time sitting in her lounge room, drinking coffee swapping stories. Watching whatever cooking show she’d turn it to when I arrived cos she knew that what I enjoy watching. I’d always ask her advice when looking for a particular recipe, so she shared her Lemonade Scone one with me once. I vividly remember her telling me not to stress if it looks wrong, it always comes right again with a little love.

I’ve taking that advice all through my life, not just with scones.

My Noah asked me the other day if we could make scones with jam and cream. For a 9 year old he has the most particular tastes. So together we created Nanny’s Lemonade Scones. Then stood at the kitchen bench and enjoyed them with lashings of cream and my homemade Strawberry Jam.

Nanny’s Lemonade Scones

You’ll need:

  • 2 Cups SR Flour
  • 1 Cup Lemonade
  • 1/2 Cup Cream
  • Milk, for brushing
  • A butter knife for stirring

Method:

  1. Preheat your oven to 150C.
  2. Add the 3 ingredients to a bowl and mix together with a butterknife. If too wet, you can add more flour. When its starting to come together into a light dough tip it onto a floured bench and press together gently with your fingers.
  3. Flatten the dough slightly then cut rounds out with a cup/biscuit cutter. Brush the top with milk and bake for around 10-15 minutes, or till the top is golden.
  4. Allow to cool before cutting in half and enjoying however you prefer your scones.

They’re so delicious and don’t tend to last all that long in our house, I really enjoy these little reminders of my Nanny now that she’s passed on. She’s still here, making scones in my kitchen with me and Noah.
