Last year I hosted a ‘Sip & Dip’ cooking workshop and was thinking about what quick and easy dessert we could whip up if we’d had a bit more to sip than dip. Welcome to the cheesecake bites!
These are such a quick and easy dessert to create, and bonus is you can really make them your own. Swap the biscuit crumbs for crushed nuts, chocolate shavings or sprinkles. Add in some cocoa to make them chocolate, some baileys to give them a spike or leave them simple and plain vanilla. All you need for this is a food processor (of course I used my Thermomix®) and some spare hands for rolling!
Cheesecake Bites
A quick dessert that pleases everyone, every time !
- 500 g cream cheese
- 1/4 cup icing sugar
- 1 tsp vanilla paste
- 200 g Your favourite biscuits, crumbed. (Could substitute for sprinkles, shaved chocolate, crushed nuts….)
Using an electric mixer, beat the cream cheese with the icing sugar and vanilla until smooth.
Line a baking tray with paper and using a small ice-cream scoop, scoop out bite sized rounds of the mixture and add to the tray. Place the tray into the fridge for 30 minutes to firm the mixture.
Crumb, beat or mill your coating for the bites. Once chilled you can roll the bites in your preferred coating, pressing them into the coating to ensure an even coat. Try not to eat them all straight away!
