Breakfast for me, is always a last thought. My mornings consist of:
– Coffee
– Kids breakfast
– Kids dressed for the day
– PHOENIX BRUSH YOUR HAIR!!
– Shower
– Kids, find your shoes now before we have to leave.
– Look for where I left my wig around the house
– PUT YOUR DAMN SHOES ON!!
– In the car, we’re late for vacation care/school/work. Again.
– Shit, I’m hungry, I’ll grab something soon…
That’s why I love little pots of Bircher Muesli. I can premake them and just grab and scoff over the sink between hair and shoes.
This recipe from my Life in Balance Cookbook Challenge is full of seeds and oats and delicious things to keep me going. For those mornings I have time, I tip them into a bowl and enjoy with yoghurt and fruit.
This recipe omits the traditional grated apple mixed through the oats before setting overnight, which I think help to breakdown the oats a little more. But the addition of seeds adds a little extra fibre.
I set mine in these little glass Yoghurt jars I have through working as a Thermomix Consultant. They’re great not just for pot setting yoghurt, but also little portions of chocolate mousse, panna cottas, storing spices and little jars of breakfast.
Definitely a recipe I will be remaking for more of those busy mornings I plan on having this year!
