A good clean start

I’m one recipe down already!

I figured the best place to start is at the start, so a breakfast dish made the perfect sense. I’ve enjoyed making my own granola recipes over the years. Always adjusting the fruit:nut ratio. Oats:coconut. Should I add cacao? Chia seeds? {fyi, that one’s a nope}. How much sweetener to get it just right?

Granola to me has to be the perfect combination of toasty and crunchy and deceivingly healthy while still tasting delicious. It has to be paired with milk, yoghurt and fruit. And always a coffee.

I was interested to make this ‘espresso granola’, from Life in Balance. It seemed to be the perfect combination of all my favourite elements.

While the recipe was super simple, I found it all a bit too wet. Moist. {Sorry not sorry.} It took twice as long to dry out to my preferred crispiness. Once cooled I bottled it up so I can try to get to it before Hubby does in the morning. Don’t think I’ll have much competition with the kids terrible cereal in the house during the school holidays!

I swapped the raisins for cranberries (cos that’s what I had!) but the rest was to recipe. If you’d like to see this recipe and make it yourself I found it online here.
