Recently, I embarked on a remarkable collaboration with Noosa Black Garlic, an amazing Sunshine Coast business quickly becoming known for producing the finest (and award winning!) Black Garlic. During our unique cooking workshop we discovered the extensive possibilities of incorporating black garlic into our dishes. From fresh pasta with black garlic butter to perfectly cooked steak and even a mind-blowing Black Garlic and Honey ice cream, the results were nothing short of extraordinary.
The Allure of Black Garlic
Before we delve into our delicious creations, let’s take a moment to appreciate the star ingredient – Black Garlic. Noosa black garlic is not your typical garlic; it’s the product of slow-cooking elephant garlic bulbs over several weeks. This process transforms the garlic into a sweet and umami-rich delicacy with a unique, deep black color. Its complex, sweet and savory flavor profile makes it an exciting ingredient for any cook.
Fresh Pasta with Black Garlic Butter:
The night began with an exploration of homemade pasta, the epitome of comfort food. We decided to prepare a fresh pasta dish that incorporated black garlic butter. The black garlic butter, rich and deeply flavorful, added a unique dimension to the classic Italian pasta. It had a sweet, slightly earthy undertone that complemented the pasta’s silkiness perfectly.
Black Garlic Filo and Brie:
Perfect for every platter table, this Filo wrapped Brie took centre stage. Using more of our black garlic butter, we layered it between sheets of filo pastry before wrapping it around the brie and baking everything until it was crispy and golden. The result was an oozy cheese encased in crispy pastry that we just dug into all night!
Black Garlic and Honey Ice Cream:
Perhaps the most unexpected but utterly delightful creation of this collaboration was our Black Garlic and Honey ice cream. This innovative dessert was an instant crowd-pleaser. The mellow sweetness of the honey balanced the umami of the black garlic, resulting in a truly unique ice cream flavor. It was a testament to the limitless creativity that can be achieved in the kitchen when bold ingredients like black garlic are involved.
Mix Taste Eat’s collaboration with Noosa Black Garlic was a resounding success, showcasing the incredible versatility of black garlic in various culinary applications. From savory to sweet, black garlic added an exciting twist to classic dishes, redefining the boundaries of flavor in our cooking school.
If you’re looking to elevate your culinary repertoire and add a touch of gourmet flair to your dishes, adding some Noosa Black Garlic to your dishes is a must. On the Sunshine Coast you can buy it from the White’s IGA stores around the coast (I grabbed one in Bli Bli) or at the Eumundi Markets. Check out their website for how to get it if you’re outside of the coast.
