Crumbed Caramel Bliss Balls

Date

Every month I run a team meeting with my team of Thermomix Consultants. Together we celebrate our wins for the month, chat about what’s working for our Thermomix businesses (and what’s not), organise our workshops and customer care and plot to take over the world.

Not really.

But there is always food. So much food.

One meeting when I first started a few years ago, I ran a ‘Bliss Ball Challenge’ with my team and the neighbouring team. There were a lot of Thermomix lovers in my kitchen so I put them to use! I pulled out all the wholefood ingredients from my cupboard – all the nuts, dried fruits, seeds, spices, herbs, and staples I could find – and said ‘go for it. Make the best most delicious bliss balls you can’.

And ohmigod they did.

These soft, gooey and caramelly (is so a word) bliss balls are rolled in an amazingly fragrant Cinnamon crumb, which creates the perfect crunch when you bite in.

These are a MUST MAKE in your home – you just have to try them! Here’s how:

Crumbed Caramel Bliss Balls

You’ll need:

  • 2 tbsp Coconut Sugar
  • 1 Stick of Cinnamon
  • 40g Fresh Dates
  • 80g Peanuts
  • 120g Almonds
  • 20g Coconut Oil
  • 30g Coconut Cream
  • 2 tsp Mesquite Powder
  • 1 tsp Maca Powder
  • 1 tsp Vanilla Extract
  • 30g Maple Syrup
  1. Add the coconut sugar and cinnamon stick to the mixing bowl and mill for 1 Min/Sp 9. Set aside in a shallow bowl for rolling the finished balls.
  2. Without rinsing the bowl, add the remaining ingredients and blitz together for 10 Sec/Sp 6. Scrape down sides of the bowl and mix again for 10 Sec/Sp 6.
  3. Taking teaspoons of the mixture (or the amazing ice-cream scoop tip!!), shape into balls with wet hands before rolling them in the cinnamon mixture, coating evenly. Refrigerate till firm before serving.

Sooooo delicious. You could swap the nuts for sunflower seeds to make them lunchbox friendly. Also, if you didn’t want to scoop you could press into a square and sprinkle the cinnamon sugar over the top before cooling and slicing it into little squares.
