Autumn Nourishing Meals

Did you feel that cool change come in last week? Autumn is definitely here, with Winter knocking on the door! With the cooler weather, many of us are looking for comforting and nourishing meals to warm our souls and bodies. Here are some of my favourite autumn recipes that are both delicious but also packed with nutrients.

  1. Roasted Vegetables with Herbs and Spices – Root vegetables such as sweet potatoes, carrots, and beetroots are in season and packed with a wide variety of vitamins, minerals, and fibre. Roasting these vegetables with herbs and spices not only brings out their natural sweetness but also adds a variety of nutrients and antioxidants to your diet. I love to enjoy them with homemade Capsicum Mayo and topped with toasted pepita seeds for a lovely crunch. 
  2. Hearty Vegetable and Lentil Stew – Soups and stews are perfect for colder months, and a hearty vegetable and lentil stew is a great way to incorporate plant-based protein and fibre into your diet. Lentils combined with seasonal vegetables such as kale, pumpkin and mushrooms as well as warming spices create such a delicious meal. This kind of stew is perfect for meal prep and can be enjoyed over several days.
  3. Baked Apples with Cinnamon and Walnuts – Apples are one of the quintessential autumn fruits, packed with fibre, vitamins, and antioxidants. Baking apples with cinnamon and walnuts creates a warm and comforting dessert that is both delicious and healthy. This dessert, topped with vanilla custard, is perfect for a cosy night in or as a sweet treat after a meal.
  4. Creamy Pumpkin Soup –  Butternut pumpkin is a versatile and nutrient-dense vegetable that is perfect for autumn. A creamy butternut pumpkin soup is a staple within most homes during the cooler months. Roast the pumpkin with warming spices such as cinnamon and cumin, then blend it with coconut milk and vegetable stock to create a creamy and flavourful soup.
